How do I knock text out of an object so that it is transparent and objects behind it will show through the text?

1 With the text in front of the object,
2 select both the object and the text
3 In the "Arrange" tab, click the icon for "subtract".

Another object which has been placed in the background will now show through the text cutout.

But, if the text is transparent, why include it in the first place? Otherwise, just set it's color to the color of the object beneath it.
